fresh spring dinner

This is a super easy throw together with whatever you have in the fridge dinner with a few pantry staples. It's one of my favourite lazy night dinners, everything is ready by the time the protein is cooked.

Kind of a Vietnamese Salad

• rice noodles  - qty depends on how many you are serving. Cook according to package, rinse well in cold water and then reheat under hot tap water before you serve.
• grilled protein (we had organic chicken but it's great with tofu, pork or steak) marinated in a combination of satay sauce and sweet chili sauce.
• a couple of handfuls of chopped fresh basil and cilantro
• chopped green onions
• a mix of chopped veggies: tomatoes, bean sprouts, pea shoots - whatever you have on hand.
• steamed veggies would be great - broccoli, green beans, carrots. I added some garlic sauteed gai lan - spinach would work too.

Dressing for 2 servings
juice of a lime
2 tablespoons soy sauce or tamari
2 tablespoons water
1 tbsp rice wine vinegar
1 tbsp of sweet chili sauce (if you don't have it - 1/2 a red chili finely chopped and 1 tbsp of sugar)
1 clove garlic, crushed
1 tsp of oil
a few splashes of fish sauce
Whisk together - Add more sugar if you prefer it sweeter.

Put rice noodles in a serving bowl, layer with veggies and herbs and pour dressing over top.
Garnish with toasted, chopped peanuts if you have some handy!
